For amazing bratwurst, cube 3 lbs. of meat (2.5 lbs. ground pork shoulder or butt plus 0.5 lbs. beef or pork fat) and cool in the freezer for 20 minutes. Grind with 1/4" die, blend in 2 oz. Burlington Bratwurst Seasoning and 1/2 cup milk and process in a food processor until smooth. Make into links or patties.
